Panko Green Bean Fries

Ingredients
  • ½ lb green beans, trimmed
  • 1 cup flour
  • 1 egg
  • ⅓ cup skim milk
  • 3-4 cloves garlic pressed in a garlic press
  • 1 and ½ cups panko bread crumbs
  • ½ cup finely grated pecorino or parmesan cheese
  • 2 teaspoons paprika
  • Kosher salt, to taste
  • pepper, to taste
  • 2 tablespoons melted butter
Instructions
  1. Preheat oven to 425 F.
  2. Fill a large pan with 2-3 inches of water and bring to a boil. Prepare a large bowl of ice water and set aside.
  3. Blanch the beans for 3 minutes and immediately submerged in ice bath.IMG_1289
  4. To prepare beans you will need three bowls. In the first bowl, combine the flour paprika, salt, and pepper.
  5. In the second bowl, combine the egg, milk, and garlic, whisking to combine.
  6. In the third bowl, place the panko and cheese.IMG_1296
  7. Remove 2 tablespoons of the flour mixture and whisk into the egg/milk mixture.IMG_1284
  8. Pat the beans dry and cover in the flour mixture, then into the milk mixture, and finally into the panko mixture to coat.IMG_1303
  9. Arrange the beans in a single layer on a baking sheet lined with parchment paper.IMG_1298
  10. When all beans are on the pan, lightly drizzle melted butter over each.IMG_1304
  11. Place beans in oven and cook for 15 minutes, or until slightly browned.

Serve with homemade Aioli! (Just be sure to coddle the egg prior to using the yolk.)IMG_1315
