
Most people who have been to Ethiopia have either tried or seen the layered avocado “smoothies”.
Here is a fun twist on a classic drink.
Ingredients:
Note: any fruit can be used or substituted in this recipe (except we strongly recommend the avocado). Mango is a great classic edition that didn’t happen to be available the day we made the recipe, but is a delicious compliment to the sweet avocado flavor.
2-3 Avocados, sliced
6 oz blueberries (fresh or frozen)
1 cup chopped strawberries (fresh or frozen)
1-2 tablespoons honey
Juice of 1 lime
1/2 cup of water
3 oz rum (optional)
edible flower for garnish (optional)
Directions:
First layer:
In a blender, add avocado, 1-2 tablespoon honey, lime juice, and 1 ounce of rum (or water). Blend until smooth, adding water until it is pourable but not watery.
Pour first layer into a glass.
Layer 2:
Blend blueberries, 1 ounce rum (or water), and a touch of honey. If using fresh blueberries, blend with ice to thicken.
Pour second layer.
Layer 3:
Blend strawberries, 1 ounce rum (or water) , and a touch of honey. Again, if using fresh strawberries, blend with ice to thicken.
Pour on top layer.
Garnish with an edible flower.
