Panko Green Bean Fries

Ingredients
  • ½ lb green beans, trimmed
  • 1 cup flour
  • 1 egg
  • ⅓ cup skim milk
  • 3-4 cloves garlic pressed in a garlic press
  • 1 and ½ cups panko bread crumbs
  • ½ cup finely grated pecorino or parmesan cheese
  • 2 teaspoons paprika
  • Kosher salt, to taste
  • pepper, to taste
  • 2 tablespoons melted butter
Instructions
  1. Preheat oven to 425 F.
  2. Fill a large pan with 2-3 inches of water and bring to a boil. Prepare a large bowl of ice water and set aside.
  3. Blanch the beans for 3 minutes and immediately submerged in ice bath.IMG_1289
  4. To prepare beans you will need three bowls. In the first bowl, combine the flour paprika, salt, and pepper.
  5. In the second bowl, combine the egg, milk, and garlic, whisking to combine.
  6. In the third bowl, place the panko and cheese.IMG_1296
  7. Remove 2 tablespoons of the flour mixture and whisk into the egg/milk mixture.IMG_1284
  8. Pat the beans dry and cover in the flour mixture, then into the milk mixture, and finally into the panko mixture to coat.IMG_1303
  9. Arrange the beans in a single layer on a baking sheet lined with parchment paper.IMG_1298
  10. When all beans are on the pan, lightly drizzle melted butter over each.IMG_1304
  11. Place beans in oven and cook for 15 minutes, or until slightly browned.

Serve with homemade Aioli! (Just be sure to coddle the egg prior to using the yolk.)IMG_1315

    Make sure there are no GMO’s on your panko breadcrumbs as most of them contain soybean oil and/or canola!

      Thanks for the heads up! We used 365 brand, which doesn’t use any oil. This is helpful for the future, though! (I forget sometimes almost everything has soy in it these days.)

    Yum! Too bad no one else in here likes parmesan cheese but me :-( I guess I could try it without.

      We made some without (just in case) and it was still awesome- just use 1/2 cup more breadcrumbs and omit the parmesan.

    I make these with zucchini!!! I dip zucchini in egg white and then in a mix of panko crumbs, sakt pepper, red pepper flakes, and crushed garlic. Put it on a pan with a drizzle of olive oil and baje at 425 for 20-25 min , serve with marinara sauce…. I would eat a whole pan!!!
